Malabar and Tellicherry are not two different peppers. They are two grades of the same Indian black pepper (Piper nigrum), grown along the Malabar Coast of Kerala. Tellicherry is simply the name given to the largest, ripest berries, sorted out by size; the rest is sold as Malabar pepper. That is the whole difference in a line — Tellicherry tends to be bolder and more aromatic, while Malabar is sharper, hotter and better value for everyday cooking.

So what is the actual difference?

It comes down to berry size and ripeness. Pepper berries are graded after drying, much as green cardamom is graded by pod size. The biggest, most mature berries — usually left on the vine a little longer to ripen — are separated out and sold as Tellicherry. Smaller berries become standard Malabar grades. Because the Tellicherry berries are riper and denser, they carry more oil and a fuller, fruitier flavour. Malabar pepper is no less real; it is just younger, sharper and hotter.

Where the names come from

Both are Kerala pepper. “Malabar” is the historic name for the Kerala coast, India's pepper country. “Tellicherry” is the old spelling of Thalassery, a town on that same coast — the grade took its name from the port it once shipped through. On sacks you will also see letter grades: MG1 (Malabar Garbled 1), and TGEB and TGSEB (Tellicherry Garbled Extra Bold and Special Extra Bold) at the top of the ladder.

Which should you buy?

For most home cooking, freshness matters more than the grade on the label. A fresh, whole Malabar peppercorn ground at the table will beat stale pre-ground Tellicherry every time. Reach for Tellicherry when the pepper is the star — a peppery finish, a tasting, a gift. Reach for Malabar for everyday heat and value. Either way, buy it whole.
