Green cardamom is one of the most versatile spices in the Indian kitchen — sweet, floral and at home in both savoury dishes and desserts. The short version: use whole pods where you want gentle background fragrance, crush or grind the seeds where you want a stronger hit, add it early in slow dishes and late in quick ones, and go easy — a few pods flavour a whole pot.

Whole pods, crushed pods, or ground seeds?

All three have a place:

  • Whole pods — dropped into rice, chai or a curry for a mild, even fragrance. Bruise them lightly first so the flavour can escape, then fish them out before serving.
  • Crushed pods (husk and all) — split with the flat of a knife for a bit more punch; common in chai and biryani.
  • Ground seeds — the strongest form, for kheer, cakes and spice blends. Grind the little black seeds (not the papery husk), and do it fresh, because ground cardamom fades fast.

How much to use

Cardamom is potent, so a little goes a long way. As a rough guide: 3–5 pods for a pot of chai or a cup of rice, 5–8 for a family biryani or kheer, and about a quarter to half a teaspoon of freshly ground seeds where a recipe calls for cardamom powder. Start low — you can always add more, but you can't take it back once a dish turns soapy from too much.

When to add it

In slow-cooked dishes — biryani, pulao, curries, kheer — add cardamom early so its oils have time to infuse. In quick dishes and drinks, add it near the end: for chai, crush the pods in with the tea and let it simmer; for coffee, a pinch of ground cardamom in the grounds is enough. In baking, fold ground cardamom straight into the batter or dough.

Dishes and drinks it loves

  • Masala chai — cardamom is the signature note; pair it with ginger, a little pepper, cinnamon and clove.
  • Biryani & pulao — whole pods in both the rice and the masala.
  • Kheer & payasam — ground seeds stirred into the milk.
  • Coffee — a cardamom-spiked brew, the way it's drunk across the Gulf and South India.
  • Cakes, cookies & buns — ground cardamom in the batter; wonderful with citrus, coffee or almond.

Getting the most flavour

The aroma lives in volatile oils that fade once the pod is opened or the seed is ground, so buy whole pods and crush them just before use. Bigger, high-oil pods carry more punch — that's the point of grades like 8 mm cardamom. Keep the pods sealed, cool and dark; our guide to storing spices covers the details.
